We’ll admit it, Sardella’s Pizza and Wings is a busy place! With customers noshing on cheesy slices in the dining room, orders coming in online and via phone, numerous menu items including our famous gourmet pizzas being whipped up in the kitchen, and delivery drivers zipping in and out to ensure food arrives piping hot – there is a lot going on!
To keep everything running on track and on time we follow a strict division of job responsibilities. Based on the pizza kitchens of Naples, here is a breakdown of how our kitchen at Sardella’s Pizza and Wings runs:
Translated as ‘It Must’ – This is the person that keeps the kitchen running on time and in sync. Keeping track of incoming and outgoing orders, watching that the pizza line is working well together, and even boxing up pizzas as they come out of the oven.
The Friggitore
Essentially “the fry guy” the Friggitore operates the fryers, making sure wings are delivered to your table hot and crispy.
The Pizzaiolo
The Pizzaiolo has the flashiest job, and most likely the one you mentally associate ‘pizza making’ with. The Pizzaiolo is responsible for stretching and tossing the dough. Without a very specific technique the crust may end up too thick or thin in places meaning it won’t cook evenly. Quite literally the quality of the entire pizza rests in the hands of the Pizzaiolo.
The Assistant Pizzaiolo
The ‘Assistant Pizza Maker’ helps out the Pizzaiolo in any way necessary, whether it be running for extra ingredients, ensuring the toppings match the order, or any number of kitchen tasks. The Assistant Pizzaiolo also studies the technique of the Pizzaiolo with the intent of learning the craft of pizza making and moving his way up in the kitchen team.
The Fornino
The Fornino is responsible for running the oven, making sure each slice comes out of the oven with the perfect balance of melty cheese and crispy, flaky crust. The Fornino may also assist in boxing and cutting the pizzas as they come out of the oven.
